In the past few weeks since the holidays I have been trying several vegetarian friendly meals, as you may have already noticed. Everything from vegetable soups, to beet and sweet potato fries, to collard greens. There’s so much one can actually do with just vegetables.
Tonight I decided I was craving some spaghetti, but because I am so used to making a meat sauce I had to rethink how I was going to make dinner. After rummaging through the crisper draws of the fridge, I took out some Broccoli, mushrooms, peas, onions and garlic, prepped them all and sauteed them all together.
Cooked up some whole wheat pasta, and tada, a simple veghetti dinner. Can I tag that word, I’m sure its been used somewhere else by someone else.
In any case, another simple, quick, delicious and healthy dinner to add to the archives.
